Mmmmm Cornbread!

When it comes to cornbread things can get a little bit boring. So after devising a good plan, I decided to spice up a chilly (literally) evening with some out of the ordinary corn bread, and some out of the can chili.

I started off with a box of Jiffy corn mix, and after adding the traditional egg and milk, I also tossed in half a can of pinapple chunks, I often throw in a few handfuls of canned corn, but decided to go for something a bit more deliberately sweet. 

To balance out the sweetness, I also pulled out some pepperjack cheese.

Instead of making a traditional set of muffins, I spread the thick batter thin on a regular cookie sheet and let the mixture cookup almost like a cake. I let the edges get crispy and puller her out of the oven and cut into triangles. It was an oh so yummy side to an already yummy cup of vegetarian chili!

Inspiration…

I’m not a big alter person, but I’ve never really been able to say no to an Ikea shelf, so this puppy in and of itself has become my favorite place to keep clean and inspirational.

Kate and Daria have a humble place above my bed. They often remind me that outside of this small town there is something a bit more glam, a bit more high fashion, and a bit more… more. These photos remind me that there is a goal.

This is just a bit of what I’ve got racked up over the years. Some of it is at home at my parents house, and some of it is in storage. But here is just a little taste of what I love…

Case of the Mondays

Nothing like a little case of the Mondays to get Grishley in the mood for some weeknight meals.As the days grow shorter, it seems like the only place to find something bright and cheery is the kitchen.

For this past Monday’s supper I whipped up some Vegetable medley, a quiona and rice dish, and some ranch panko chicken.

I cooked up my veggies with a bit of butter, some olive oil, garlic, green onion. Zucchini and carrots were finished with a bit of lemon juice to bring out some springtime flavor in the heart of a Corvallis cold spell.

The Quinoa and rice came together in a flash when I realized I only had a cup of white rice left, and had a box of quinoa on hand. I used a cup of each and brought them to a boil on the stove using chicken broth instead of water, seasoning with salt and pepper, garlic salt, basil, oregano, and finishing with grated parm… um YUM!

The chicken may in fact be one of my new favorites, I breaded the chicken using panko brad crumbs, but also added a packet of hidden valley ranch seasoning to the flour I breaded them in. I shallow fried them in olive oil and they were mighty divine if I do say so myself in my southern accent…Savin’ money for shoes… one home cooked and tasty meal at a time!

When it comes to balancing school and the holidays, I usually spend the most time studying, the second most time thinking of what I can afford for my family, and the least time figuring out what to put on my christmas list. O Happy Day

With all of the dark collections lately, Paul & Joe breathed a sigh of light and fuzziness (if you can sigh fuzziness) into the last moments of fashion week.

 It takes a lot to get Grishley really excited about a collection out of sheer whimsy these days, but this collection definitley took the cake.

The collection of super flirty looks including short shorts, jumpsuits, not-you-boyfriend sized jackets and some quality prints really stood out for me. Not only did I immediately want the entire collection, but also pictured myself somewhere sunny with my honey and an umbrella in my drink…ah if only.

Another thing that I truly truly love about this collection is the clean lines. It is a simple and easy collection for spring/summer that almost feels like a resort collection. A beautiful collection of pieces you wouldn’t have to slave over ironing, or need an hour to get dressed in.

Paul & Joe currently has a flagship store in California, with a store in New York on the horizon. Perhaps it and I can meet up in the big apple this summer (cross your fingers) but for now I guess the only way I’ll be squeezing into these lovelies is in my vacation dreams.

Pep Talk.

 

Having known since I was a small child that the fashion industry is where I wanted to find at the end of my career rainbow, I often had visions of New York or Los Angeles in my head. But it wasn’t until this summer that I realized that my hometown of Portland may just in fact be the perfect place to mold my fashion future!

Taking classes at the Palmer/Pletsch school in Portland opened my eyes to the millions of different fabric stores, and inspiring places that Portland has to offer. Not only did I rediscover the amazingness that is Pendelton wool, but also managed to run into the Project Runway season seven winner Seth Aaron Henderson! In our brief exchange, Seth Aaron reminded me why I fell in love with design in the first place. After telling him that I was a design student, he ever so coolly said “Yea you’ll learn how to do it right and really like it, then you’ll really learn to do your own thing”.

It was in that moment that it hit me, as my hands were shaking and I was uncontrollably sweating in the presence of one of my heroes, I realized that he was exactly right. I had fallen in love with design because I could make my own looks that I couldn’t find in stores, and it wasn’t until Seth Aaron sparked the large dull light bulb over my head that I realized that the gap between the life I am living and the life that I have always dreamt of is slowly closing.

While I still have a long way to go, I have quickly learned that taking a step toward the direction of your dreams is in itself more successful than running a full mile in the direction of what is easy.

Now this column is not meant to be inspiring, or resemble in any way one of those pamphlets that were handed out in high school to help promote self awareness and confidence, but rather a simple wake up call. Just a little “hey” from your future asking you what you want from it, and how hard you are willing to work now to get it.

This summer I have spent more time inside than out, but that is the due I am paying in order to become better at mastering my craft. I often had to enter into situations where I was uncomfortable in order to master the tasks that I was allotted, and now I can honestly say that in order to succeed in however it is that you determine success you have to work hard.

While I have always been backed by my passion for design, I know undoubtedly that I would not be as readily inspired day to day if it were not for the simple rewards of the hard work that I am putting in.

So if there is any advice to come out of this fashion focused column that in itself today is not fashion focused at all, it is simply that Yoda was right. “There is no try…there is only do or do not,”. In order to get what you want you have to be willing to put in the work. Even if it is in four inch heels.
