Finals week ended and before I knew it all of my usual dinner guests had gone back home for their mothers to cook for them I suppose… But here in ol’ Corvallis I was still knee deep in an unfinished collection, and in a much needed attempt at saving money for Christmas presents, I decided to see what I had left in my cupboard and went to town.
I set my sights on homemade pizza, and made the most simple whole wheat crust ever. I used one packet of yeast and expanded it with some warm water then added two cups of whole wheat flower and mixed in olive oil and water until I got the right consistency. I let the dough rise for about 10 minutes then started with the toppings.
I sliced up some salami, and tossed on some artichoke hearts and feta cheese, to make sure everyone stayed in place I used a bit of parm. and mozerella to tie the whole pie together. The secret ingredient for this pie however was a whole sliced pear, which added just enough sweetness to this savory bite!
On the side of my yummy pizza I boiled up some asparagus, and tossed it with herbs, olive oil and parm! Yummy!
